In spite of the emphasis on whole foods in this book, there are exceptions consisting primary of a few optional nutrient supplements. Oxygen supplements in the form of ozone (03) and various stabilized oxygen compounds are treatment options in certain degenerations. However, such concentrated oxygen treatments are not necessary for most people.
The diet we ultimately recommend does not include anal products that require the taking of life, and except for options in the "congee" recipes, the extensive cookbook section is vegan (without any animal products whatsoever). Thus our recipes are free of two of the most prevalent allergens-dairy and eggs. There are countless recipe books based on meat, eggs, and dairy, and people in the West usually need no further encouragement to eat animal products. However, it is not our intention that such products be excluded entirely; many of their positive and negative properties are discussed in upcoming sections. We realize the value of meats in certain types of deficiencies, and we have described a way to prepare meat for medical use in cases when other measures are unsuccessful. The value of dairy is also defined, along with the types of people it may benefit. We do not expect people coming from a background of the "Standard American Diet" (SAD) to instantly give up al anal products. We encourage creative use of the recipes, and when animal food is used, it may be added as a condiment or ingredient.
Most Americans have a lifted awareness of the value of grains and vegetables as the focus of a meal, and limited ideas for preparing them. When they learn the variety of simple factors involved in the preparation of vegetarian food, vital energy is added to their meals. Par of this vitality comes from correct preparation procedures that preserve and concentrate nutrients. Another important factor is the attention and respect paid to the food during its preparation; in subtle but noticeable ways a meal prepared with mindfulness will taste and look better. Our book is written in the spirit of Brother Lawrence, the legendary English friar of several centuries ago who noticeably transformed everyone who tasted his cooking. Him method was to "practice the Presence" while preparing food.
In order to heighten understanding and respect for the healing essence in simple food, information about key foods appears throughout the book as well as in the recipe section. Much of the information describes how the food acts on the body, and especially whether or not it is good for certain imbalances. This information enlarges the dimension of food and complements standard nutrient measurements such as vitamin and mineral content.
